Tips and Tricks for seafood cold storage

seafood-cold-storage.jpgWhen it comes to fish and seafood cold storage its preferable to consume within two days of purchase. However, this is of course not always possible as fish often needs to be transported several miles to its final location before it is able to be purchased by the end user. Here are some fish cold storage tips to help you to keep your fish fresher for longer.

Whether you are freezing fillets or whole carcasses, the fish should be tightly wrapped in plastic film. Aluminium foil can be used as a substitute. Make sure your take the time to exclude as much air from inside and around the packaging as possible as interaction with oxygen directly leads to spoiling.

The seafood needs to be frozen to a temperature below 0 degrees Celsius as quickly as possible after catching and held in a seafood cold storage unit until needed. Air also causes fish to lose texture and drying also. The most securely the fish is wrapped, the fast the fish will freeze and the better the seafood will taste after it is defrosted.

To thaw fish products, remove the packaged from the freezer and then placed into regular refrigeration 24 hours before you plan to prepare the fish. It’s not advised to speed up the thawing process by submerging in hot water or leaving the package in sunlight as this will cause rapid development of bacteria and will put your end user at risk of food poisoning. Once the fish is thawed make sure it is consumed between 24-48 hours and do not re-freeze.

An alternative way of freezing fish fillets or steaks is to store them in a fish cold storage container which contains icy (but still liquid) saltwater or seawater. You should then freeze the entire container making sure the seafood is fully submerged in the water. When the fish is thawed you will get a great a noticeable superior product.

The above methods of freezing fish may only be suitable for freezing small amounts of fish. To store large amounts of fish you will need to invest in a seafood cold storage unit of large temperature controlled fish freezer.
